Different Origins

Mandi comes from Yemen. It is more about slow cooking and smoke than about a long list of spices. The flavour is deep and aromatic rather than hot and busy.

Different Cooking Methods

Biryani is usually layered: par-cooked rice and marinated meat are stacked and sealed, then cooked together so the flavours marry. The spices are bold and the rice is often tinted with saffron.

Mandi is cooked the traditional way in a tandoor, a clay oven. The meat roasts slowly while the rice cooks below it, soaking up the seasoned broth. The result is moist, smoky meat and tender, fragrant rice.
